The Food Journey- Journey of the beans

Here at Damson we pride ourselves on being able to lovingly source fresh ingredients and amazing suppliers. We also love a great cup of coffee! Here’s our story behind the beans………. Rcoffee Background - After being introduced into the coffee industry by one of the “big boys” back in 2008, I felt something was missing. After learning the trade I decided to go it on my own and start Rcoffee in 2010. The Ellanos coffee range was developed through a lengthy “cupping process” where the range was born. Named after my goddaughter Ellen (not very Italian I know, hence the “os”), the business prides itself on providing a first class coffee, at a competitive price and a service second to none. A bit like the old days, we speak to our customers and don’t text or Whatsapp, but who knows…..we might Facetime in the future! Then came RTeaCo. I suppose it was only natural. Having built the business on quality coffee and service, I found the tea market starting to catch up. Me being me, I had to develop a tea range to complement Ellanos. The same process was carried out as the coffee and RTeaCo. was born in November 2014. Keep your eyes peeled for the story behind the leaves! The beans……. Ellanos Caffe (Italian Blend) –Is a combination of sweet Brazilian, smooth Indian and bright Central American beans that result in a sweet and aromatic taste. The beans combine to form a brown like sugar sweetness and stone fruit acidity. A clean and well-rounded finish makes this an easy drinking coffee. Domaine Mas Barrau Cabernet Franc, Pays Du Gard Key Facts: Producer - Boutinot France Gard Wine maker - Eric Monnin County -France Region of origin - Gard Grapes - Cabernet Franc ABV -13.5%   Domaine Mas Barrau Cabernet Franc is best described as wild ripeness tamed by sweet seductive scents that take Cab Franc to a new level of pleasure! A wine of real character that brings you a wild ripeness of sweet scented fruit twinned with an edgy wood perfume. The pallet is incredibly long and rich. This wine is produced in the Gard region which lies at the southern end of the Rhone valley. The Cab Franc plants produce best when south facing and the soil is full of limestone from the old river beds.     Pairing- Cab Franc pairs beautifully with rich juicy meats and earthy vegetables, and of course works fantastically with a cheese board! Le Fou Pinot Noir, Pays d’Oc Country: France Region: Languedoc Grape: Pinot Noir Producer: Boutinot France, Languedoc-Roussillon ABV: 13%   Le Fou, translates as ‘the madman’ as its has long been thought that only a madman would attempt to produce the perfect Pinot Noir in Southern France. Fuller than the Pinot Noir of Burgandy, Le Fou has warm cherry notes and is an intense wine with a sweet & savoury twist. In the sun-drenched vineyards of the Southern Languedoc, grapes are planted then picked at their optimum ripeness. Finally, the grapes are cool vinified to enhance their fresh flavours. No oak is used during the process to ensure the wine is kept as pure and sensual as possible. Damson Menu Pairing Le Fou works well paired with Lamb, cold meats and mushroom risotto.   Welcome to Damson- Well we decided it was about time that we shared all our secrets with our fabulous customers and welcome you into our world of tantalising food and remarkable wines. Follow us as we share our secrets, our menus, our events and join in with us as we embark upon new journeys with our chefs and our fabulous team.   You may ask what and where is Damson? Well you will find us standing loud and proud in the heart of Salford Quays. We were the first independent dinning brand to come to the location and have certainly made a home for ourselves. Damson was established by partners Steve Pilling and Simon Stanley in 2009 with our sister restaurant at Heaton Moor, followed shortly by Damson Media City 2012! We are a relaxed, fine dining brand that offers you an eclectic, modern take on European dishes. Who are Steve and Simon….. Steve Pilling began his culinary career at Manchester’s most iconic hotel, The Midland, going on to build two multi-million pound operations from scratch in Mr Sam’s and Mr Thomas’s chophouses. While Simon Stanley has worked with some of the country’s leading chefs, including Marco Pierre White and Raymond Blanc. Together they have developed two of the most exciting independent restaurants in Manchester - Damson Heaton Moor and MediaCity - along with The Red Lion in Stockport and the Dock Yard.
